This Pineapple Baked Chicken is going to be a real crowd-pleaser. Filled with sweet and savory flavors, it’ll only take you 20 minutes to prepare and pop into the oven.


This baked chicken recipe is everything you’ll need on a busy week.

The sweet and savory flavors will have everyone licking their fingers for more. Not to mention how easy it is to prepare.

I’m a sucker for a quick and easy dinner. So when my hubby D suggested we do some baked chicken for dinner I was ready to go.

I also wanted to try something new when making this recipe. 

I don’t think I’ve ever tried adding pineapple slices to a baked chicken recipe before. 

So why the heck not try it out now?

Ingredients to Use: 

As a Caribbean cook, I love well-marinated meat. It’s how I was taught to get all the flavors in every bite. 


I find it easier to prepare my meat ahead of time. 

I like to season or marinate my meat with the right seasonings before it’s placed in a pot or pan.

Some of the main ingredients needed: 

  • Chicken Thighs – You can use either thighs or breasts. Best to use the parts of the chicken with the most flesh. You can also use a mixed combination like chicken thighs and legs (leg-quarters, chicken breasts & legs, or all three parts)
  • Seasonings – The main seasonings used for this recipe included onion, escallion, pimento berries, scotch bonnet pepper, garlic, cumin, all-purpose powdered seasoning
  • Sauces & other ingredients – browning sauce, jerk sauce, pineapple slices, sugar, and ketchup

Another great thing about this recipe is its low-budget ingredients. 

Most of these ingredients are my go-to. So my cupboard and refrigerator are stock-piled with them.

How to Cook Pineapple Baked Chicken:

With this recipe, you can be in and out of the kitchen in no time. 


Let your oven do the heavy lifting for you in this case. To break down how I best prepare this dish, I – 

  1. Cleaned and washed my chicken with vinegar. 
  2. In a large bowl, added my seasonings to the chicken. Using a spoon and my hand, I mixed in the seasoning with the chicken. 
  3. Allow the chicken to marinate for 30 minutes to an hour. 
  4. Grease baking pan, place each piece of chicken in the pan then pour off any remaining seasonings over the chicken. 
  5. Add pineapple slices over chicken, cover, and BAKE

And don’t worry about what sauce or gravy to serve with it. As the chicken is being baked, a gravy is formed.

You can use a spoon to pour or baste the chicken during turning intervals.


Storing and Reheating Leftovers

When I originally made this recipe I had used a whole chicken; my in-laws gave us from their farm.


So I had a lot of leftovers from the gravy to the chicken. 

I place the chicken in an airtight container and store it in the refrigerator for up to 2-4 days.

You can reheat the chicken in the oven or microwave.

Store any leftover gravy in an airtight container.

Keep in your refrigerator for 3-5 days. Up to a month in the freezer.

Reheat gravy in a small saucepan; slowly heat the gravy on medium heat.


Stir occasionally as it becomes liquid.

If the gravy is too thin, add a small amount of breadcrumbs then allow to slowly simmer for 5-7 minutes.

This will thicken your gravy and for the reverse effect; if it’s too thick then you can add water or chicken stock to thin it out. 

Serving Suggestions: 

I love this recipe so much and the pineapple slices were a great addition to shaking up a simple recipe without going overboard.

Homemade Pineapple Baked Chicken

What's better than a nice baked chicken dinner? It's pretty easy to prepare and you're taste buds will love you for it. The best part about baked chicken is you can pop it in oven and it takes care of everything!

  • 2 lb. chicken breasts or thighs (or mixed chicken parts)
  • 3 tbsp. Morton Nature’s Seasoning (all-purpose seasoning)
  • 2 tbsp. Eaton's Jerk sauce
  • ½ cup pineapple slices
  • ½ cup ketchup
  • ¼ tsp. cumin
  • 1 tbsp. sugar
  • 2 tbsp. browning
  • 4-5 pimento berries
  • 2 tsp. jalapeno powder

Ingredients for Green Seasoning:

  • 1 small onion (chopped)
  • 2 stalks escallion (chopped)
  • 3 cloves garlic (chopped)
  • 2-3 sprigs thyme
  • 1 sweet pepper (color green)
  • 1 scotch bonnet pepper (seeds removed, chopped)
  • 1 tsp. salt
  • cup water
  • small piece of ginger


Green Seasoning Directions:

  • Blend ingredients for green seasoning. Add additional water if mixture is too thick.

Baked Chicken Directions:

  • Wash and clean your chicken by removing any skin and fat. Cut into the desired size or leave as is then set aside.
  • Blend ingredients for the green seasoning then pour over chicken.
  • Add the additional ingredients except for the pineapple slices. Rub ingredients into the chicken and allow to marinate for 2-3 hours
  • Preheat the oven to 200 degrees C. Spray the baking pan with oil then layer the pan with the chicken.
  • Place pineapple slices over the chicken and cover with foil paper. Place in the oven and bake at 200 degrees C for 30-45 minutes.
  • Turn chicken at 20-minute intervals to ensure both sides are cooked evenly. Remove chicken from the oven once cooked.


Notes for Cooking Pineapple Baked Chicken: 

  • In the case of leftover gravy from your baked chicken, you can use it for stew recipes. Saves me a ton of time for future cooking. 
  • Using a green seasoning marinade gives the chicken more flavor and smells great in the oven.
