Ingredients To Use 

  • Cabbage – there are different types of cabbage but the one I used was the white one. You can also try sweetheart cabbage, red or purple cabbage, or any other of your choosing. 
  • Chicken – you can use either chicken breast or thighs for this recipe as it carries the most meat. 
  • Seasonings – onion, escallion, pimento berries, scotch bonnet pepper, thyme leaves, and garlic 
  • Spices – curry powder, turmeric powder, all-purpose seasoning, and cumin 
  • Other ingredients – carrots, ginger flavoring, and as an additional option tomatoes, and sweet corn

How to Cook Curry Chicken & Cabbage

In the past cooking this recipe I would start cooking my chicken like I would cook a pot of curry chicken and then add the cabbage on top. Toss a few times then serve but I realized I wasn’t getting the full flavor until I tried it this way: 

First, you want to wash and clean your chicken. Season the chicken and set aside. The trick is to stir fry the chicken, then remove from heat. Add the cabbage in the same pot and allow to cook for a few minutes. 

Add the stir-fried chicken to the cabbage and combine everything all together. Allow to cook for a few more minutes then serve with your desired sides.

For many Caribbean households, a recipe such as this is best served with boiled food such as:

  • Green bananas, boiled dumplings, irish or sweet potatoes, dasheen, and so on. 

Other suggestions can be mashed potatoes, plain white rice, fried dumplings, and flatbreads or roti.

Leftovers and Storage

Store any leftovers in an airtight sealed container in your refrigerator for no more than 2-3 days. Reheat on low heat when ready to serve.

Easy-to-Make Curry Chicken & Cabbage

Ingredients
  

  • 1 lb. chicken breast or thighs (cut into small cubes)
  • 2 cups cabbage (shredded or chopped)
  • ½ cup carrots (julienne or chopped, optional)
  • 1 tbsp. curry powder
  • 2 tsp. turmeric powder
  • ½ tsp. ginger flavoring
  • 1 tsp. thyme leaves
  • 2 cloves garlic
  • ¼ tsp. cumin
  • 1 stalk escallion
  • 1 scotch bonnet pepper
  • 4 pimento berries

Instructions
 

  • Clean and wash chicken breast. Cut into small pieces or cubes and set aside.
  • Season chicken with the following ingredients: all-purpose seasoning, curry powder, turmeric powder, pimento berries, ginger flavoring, onion, garlic, escallion, and cumin. Set aside to marinate for 1-2 hours.
  • Heat oil in a frying pan, place each chicken piece in the oil, and stir-fry for 10 minutes. Remove from heat.
  • Add shredded cabbage and carrots, and stir in the same frying pan. Allow the cabbage to steam for 5-7 minutes until the cabbage has shrunk slightly.
  • Add cooked chicken to cabbage along with all the seasoning. Add thyme leaves and scotch bonnet pepper and toss to combine everything. Allow to cook for another 5-7 minutes.
  • Remove from heat and serve.

Notes for Cooking Curry Chicken & Cabbage:

  • Add more flavor to this dish by adding carrots, sweet corn, string beans, and other veggies.
  • This recipe goes great with boiled food provisions such as green bananas, irish & sweet potatoes, boiled dumplings, and others.
