Easy-to-Make Curry Chicken & Cabbage

- 1 lb. chicken breast or thighs (cut into small cubes)
- 2 cups cabbage (shredded or chopped)
- ½ cup carrots (julienne or chopped, optional)
- 1 tbsp. curry powder
- 2 tsp. turmeric powder
- ½ tsp. ginger flavoring
- 1 tsp. thyme leaves
- 2 cloves garlic
- ¼ tsp. cumin
- 1 stalk escallion
- 1 scotch bonnet pepper
- 4 pimento berries
Clean and wash chicken breast. Cut into small pieces or cubes and set aside.
Season chicken with the following ingredients: all-purpose seasoning, curry powder, turmeric powder, pimento berries, ginger flavoring, onion, garlic, escallion, and cumin. Set aside to marinate for 1-2 hours.
Heat oil in a frying pan, place each chicken piece in the oil, and stir-fry for 10 minutes. Remove from heat.
Add shredded cabbage and carrots, and stir in the same frying pan. Allow the cabbage to steam for 5-7 minutes until the cabbage has shrunk slightly.
Add cooked chicken to cabbage along with all the seasoning. Add thyme leaves and scotch bonnet pepper and toss to combine everything. Allow to cook for another 5-7 minutes.
Remove from heat and serve.
Notes for Cooking Curry Chicken & Cabbage:
- Add more flavor to this dish by adding carrots, sweet corn, string beans, and other veggies.
- This recipe goes great with boiled food provisions such as green bananas, irish & sweet potatoes, boiled dumplings, and others.
- Other suggestions can be mashed potatoes, plain white rice, fried dumplings, and flatbreads or roti.
