Easy Egg Salad
This creamy and delicious Egg Salad recipe is the perfect lunch snack for any day of the week. Make an easy sandwich or enjoy it with a side of fries, like I do!
Since moving to the Cayman Islands, I came into the good fortune of getting cage-free eggs for FREE!
If you’ve been reading my previous blog posts, you’d know about my wonderful in-laws whose farm has all sorts of livestock, including chickens.
And, of course, when raising chickens, you know what comes with that – lots and lots of EGGS.
Now, at this moment in time that we’re experiencing, eggs can be a bit expensive.
But it is a staple in many homes. And in my house, it’s too much at the moment.
So, instead of refusing free commodities like eggs, I find easy and quick recipes and benefit from all this greatness I have.
When I first thought about this, I had 4-5 dozen eggs in my refrigerator.
So far, I’ve managed to make scrambled eggs for breakfast almost every day, but I wanted to do other things.
So, today’s egg recipe will be this creamy and delicious egg salad.
What is Egg Salad?
This salad-type recipe consists of hard-boiled eggs, mayonnaise, mustard, and a few chopped veggies.
Like a chicken salad or a tuna salad, various spices, herbs, and other ingredients are added and combined with mayonnaise.
I don’t think I’ve made egg salads in the past, but when I usually binge-watched Seinfeld, this was one of Jerry’s go-to orders when he got lunch.
Ingredients To Use
With any egg salad, there aren’t a lot of ingredients to get started.
It’s simple and easy to combine.
Egg salads often have celery as an added ingredient.
I’m not a big fan but feel free to add it to this recipe when you’re making it.
- Eggs – the main ingredients
- Vegetables – onion, garlic, escallion, tomato
- Sauce – mayonnaise, mustard
- Other ingredients – cayenne pepper, all-purpose seasoning, salt, water, relish, lime juice
Play around with the ingredients to best suit you.
I enjoyed this so much for lunch that I’m thinking of adding some turkey bacon to it next time.
How To Make Egg Salad
Making the perfect egg salad doesn’t require any fanciness, which I love.
I’m not very good at the fancy stuff, but I can’t let that stop me from enjoying good food.
Steps:
- In a large pot, bring to a boil some water. Gently add eggs to boiling water. Ensure water covers the eggs and cook for 7-10 minutes.
- Remove from heat and cool eggs in an ice bath. Remove boiled eggs from the shell and set aside.
- Chop up boiled eggs in a bowl. Add mustard, mayonnaise, all-purpose seasoning, relish, cayenne pepper, onion, salt, and garlic. Mix to combine ingredients.
- Garnish with chopped escallion or parsley.
- Serve chilled.

Naturally, egg salads are best for filling sandwiches, but you can enjoy it with a serving of fries.

- In some recipes, you’ll see that the egg yolks are separated from the rest of the egg and then mashed together with other ingredients. This way is perfect as well to make a creamier mix. You can add the egg whites after to complete the salad.
- Add chopped bell peppers, cucumbers, celery, or even bacon to get creative with your egg salad.
- Egg salads are usually a filling for sandwiches, but you can enjoy them over slightly toasted bread.
- Don’t over-boil your eggs.
- Always use an ice bath to cool down your eggs and stop the cooking process. The eggs continue to cook while in their shells.
