Growing up, cereal was my go-to breakfast choice for the mornings when I knew I didn’t have any time.
My favorite cereal was cornflakes from a brand called Red and White Cornflakes.
Though I must admit, while writing this post, I haven’t had cornflakes in a long time.
And though I love my cereal, pancakes were 2nd to it.

I’m a huge fan of pancakes for breakfast. I love breakfast food almost any time of day, even at night.
It’s one of my favorite meals of the day. I love it so much that I even have breakfast at night.
Some may say this is strange, but who said breakfast food is for morning time, haha?
I even tried making pancakes from scratch when I was younger, but that’s a story for another time, as it didn’t turn out well AT ALL.
Traditionally, Jamaican breakfast choices are often heavy meals.
However, I prefer light breakfast choices, so today, I am sharing this easy banana pancake recipe using pancake mix.
I got tired of the plain mix I get in the store, so why not spice things up?

What are Pancakes Exactly?
Pancakes are flat cakes usually made from a starch-based batter that may contain eggs, milk, and butter.
This batter is poured on a flat surface, such as a frying pan or griddle, then fried with little oil or butter.
Even though pancakes aren’t a Caribbean-type breakfast choice, these flat cakes are well-known in different regions from West Africa to Eastern Europe and North America.
All those commercials I used to see on television about pancakes piqued my interest in this easy breakfast dessert.
I remember making my first pancake batter, and it was awful.
However, I am happy to say this recipe is a delicious and fluffy one you must try.

Ingredients To Use
- Ripe Bananas – 1-2 bananas work well for this recipe
- Pancake Mix – your favorite pancake mix
- Milk – I used almond milk or coconut milk; feel free to use your choice of low-fat milk

How To Make Banana Pancakes
This super-easy recipe is one of my favorites, as it only takes 10 minutes to get fluffy, delicious pancakes.
Perfect for those busy mornings and weekdays. Plus, it’s great for everyone, even the kids.
Steps:
- Crush the banana in a bowl until soft with little to no lumps.
- Add your pancake mix and gradually add milk to the banana pancake mixture.
- The mixture should have little lumps and be slightly thick.
- Into a large pan, spray with non-stick oil or lightly coat the pan with your choice of oil. Pour circles of pancake batter into the pan to your desired size.
- Allow to cook on one side before flipping, or once bubbles begin to form at the top, flip it to cook the other side.
- Serve with syrup or fruits.
