Jamaican Oven Roast Fish
The catch of the day is this delicious Jamaican Roast Fish recipe. It’s the perfect weekend dinner stuffed with pumpkin and okra and roasted with a buttery finish.
Since I moved to the Cayman Islands, fishing has been my husband’s favorite pastime.
I’ve been getting a few lessons from him, but I leave it all to him for the most part.
Most times we go fishing, it’s off the shore as we don’t have a boat to go out at sea.
Hopefully, that’ll change soon, but in the meantime, shore fishing in Grand Cayman does have its perks.
There are plenty of docks and fishing spots to choose from across the island.
So, with all the fish we caught recently and the amberjack fish we got from a guy who showed us the real meaning of Caymankind – we decided to have a roast fish Sunday feast.
Ingredients To Use
This recipe requires little time to prepare, and with the ingredients needed, it fits any budget-friendly pocket.
- Fish: – a firm body fish is perfect for this recipe, so snapper, grunts, and amberjack are great examples.
- Seasoning: – onion, escallion, garlic, thyme, all-purpose seasoning, chili powder, fish seasoning
- Vegetables: – okra, pumpkin, scotch bonnet pepper
- Butter
You can also add diced potatoes and carrots to the stuffing of the fish.
How To Make Jamaican Oven Roast Fish
This Roast Fish is one of the best fish recipes I’ve ever made.
Once you know have your fish scaled and gutted, all that’s left to do is season and stuff your fish.
I understand some may not be a fan of okra – so you can try carrots, potatoes, and pumpkin as great alternatives.
Directions:
- Remove scales, gills, and guts from fish. Wash with lime juice and water. You can also have your local fisherman/meat store do this.
- Pat dry each fish, then use a sharp knife to make diagonal slices on the sides of the fish.
- Season each fish with all-purpose seasoning, fish seasoning, and chili powder. Rub the seasoning into the slices you made on the fish. Add the seasoning on the inside of each fish as well.
- Stuff each fish with onion, garlic, escallion, scotch bonnet pepper, thyme, okra, and pumpkin.
- Place each stuffed fish on a sheet of foil paper; add a tablespoon of butter on top and enclose the fish within the foil paper.
- Place in the oven at 350 degrees Celsius and bake for 25-30 minutes.
- Remove from the oven once cooked and allow to cool for 5 minutes.
- Serve as desired.
If you have any leftover stuffing, place it on a sheet of foil paper and wrap it up to cook while roasting your fish.

When serving your roasted fish, you can enjoy it as is or with your crystal-wrapped leftover veggies.

Here are some lovely tips to help ensure you get the best flavors from this recipe:
- Instead of okra and pumpkin, you can also stuff each fish with carrots and irish potato.
- Spice up this recipe by adding the fish atop a bed of Excelsior water crackers. The softened water crackers will make the perfect side for your roasted fish.
Storage Tips
You can keep your leftovers in your refrigerator for 2-3 days. Keep each fish wrapped in foil paper.

- 2-3 whole snapper fish or any fish of your choice over 1-2lbs
- 1 cup okra chopped
- 1 cup pumpkin diced
- 1 scotch bonnet pepper chopped; remove the seeds for less spice
- 2 tbsp all-purpose seasoning
- 2-3 tbsp fish seasoning
- 2 tsp chili powder optional
- 3-4 sprigs thyme
- 2 cloves garlic minced
- ½ cup onion sliced
- ¼ cup escallion
- 2-3 tbsp butter
