Remove scales, gills, and guts from fish. Wash with lime juice and water. You can also have your local fisherman/meat store do this.
Pat dry each fish, then use a sharp knife to make diagonal slices on the sides of the fish.
Season each fish with all-purpose seasoning, fish seasoning, and chili powder. Rub the seasoning into the slices you made on the fish. Add the seasoning on the inside of each fish as well.
Stuff each fish with onion, garlic, escallion, scotch bonnet pepper, thyme, okra, and pumpkin.
Place each stuffed fish on a sheet of foil paper; add a tablespoon of butter on top and enclose the fish within the foil paper.
Place in the oven at 350 degrees Celsius and bake for 25-30 minutes.
Remove from the oven once cooked and allow to cool for 5 minutes.
Serve as desired.
