Jamaican Oven Roast Fish

This catch of the day is this delicious Jamaican Roast Fish recipe. It’s the perfect weekend dinner stuffed with pumpkin and okra and roasted with a buttery finish.

Ingredients
  

  • 2-3 whole snapper fish or any fish of your choice over 1-2lbs
  • 1 cup okra chopped
  • 1 cup pumpkin diced
  • 1 scotch bonnet pepper chopped; remove the seeds for less spice
  • 2 tbsp all-purpose seasoning
  • 2-3 tbsp fish seasoning
  • 2 tsp chili powder optional
  • 3-4 sprigs thyme
  • 2 cloves garlic minced
  • ½ cup onion sliced
  • ¼ cup escallion
  • 2-3 tbsp butter

Instructions
 

  • Remove scales, gills, and guts from fish. Wash with lime juice and water. You can also have your local fisherman/meat store do this.
  • Pat dry each fish, then use a sharp knife to make diagonal slices on the sides of the fish.
  • Season each fish with all-purpose seasoning, fish seasoning, and chili powder. Rub the seasoning into the slices you made on the fish. Add the seasoning on the inside of each fish as well.
  • Stuff each fish with onion, garlic, escallion, scotch bonnet pepper, thyme, okra, and pumpkin.
  • Place each stuffed fish on a sheet of foil paper; add a tablespoon of butter on top and enclose the fish within the foil paper.
  • Place in the oven at 350 degrees Celsius and bake for 25-30 minutes.
  • Remove from the oven once cooked and allow to cool for 5 minutes.
  • Serve as desired.

Notes

Notes for Making Jamaican Roast Fish 

  • Instead of okra and pumpkin, you can also stuff each fish with carrots and irish potato. 
  • Spice up this recipe by adding the fish atop a bed of Excelsior water crackers. The softened water crackers will make the perfect side for your roasted fish.
