I have been tweaking this chicken recipe for some time now.

Where I’m from, baked chicken is the basis for this recipe.

However, I love a good experiment, and trying pineapple and baked chicken doesn’t sound like a bad combination.
I also wanted to add a little Jamaican love by using my homemade green seasoning marinade to enhance the flavor combos.
The flavors and aroma will spread throughout your kitchen for a homely feeling.
The best part about this recipe is that the ingredients are already in your pantry.
Even the marinade is easy to make from scratch, or you can pick up a bottle of your favorite chicken marinade at the store.
- Chicken: any of your favorite parts work
- Seasoning: all-purpose seasoning, jalapeno powder, cumin, ginger, browning sauce, brown sugar, ketchup
- Coconut oil
- Pineapple juice
- Jamaican green seasoning marinade

Think juicy, flavorful, melt-in-your-mouth chicken. I certainly enjoyed every bite of this with mashed potatoes and steamed carrots on the side.

How to Make Pineapple Baked Chicken
This easy oven-baked chicken dinner recipe will be your new favorite go-to weekday dinner.
Let your oven work for you while you binge-watch your favorite episode or work on your sides.
Enjoy juicy, flavorful baked chicken and pineapple for the best combo of sweet and savory in every bite.

Steps:
- Wash chicken in water, lime juice, and vinegar. Pat dry with a paper towel and set aside–skin on or off based on your preference.
- In a bowl, season chicken with ketchup, cumin, pineapple juice, oil, green seasoning marinade, all-purpose seasoning, browning sauce, and sugar. Allow to marinate for 2-3 hours.
- Preheat the oven to 350 degrees F. Layer the chicken thighs in a baking tray and cover with half the marinade. Bake for 20 minutes.
- Turn the chicken and pour any remaining marinade. Brush sauce over the chicken.
- Bake for another 20 – 30 minutes or until the chicken reaches an internal temperature of 165 degrees F. Broil for 5 minutes to give the chicken a nice crust.
- Remove from oven and allow to rest for 10 minutes.
- Enjoy!
Notes: For the best results, marinate your chicken overnight or at least 2-3 hours.

- 1 tbsp all-purpose seasoning
- 1 tbsp browning sauce
- 2 tsp jalapeño powder
