Equipment

  • Baking Tray
  • High-Powered Blender or Food Processor
  • Frying Pan

Ingredients

  • 2 cups dried chickpeas cooked and drained, or 2 16oz can chickpeas
  • ½ cup onion or 1 small onion, finely chopped
  • 2 cloves garlic minced/grated
  • ½ tsp cumin
  • ¼ tsp salt
  • tsp black pepper optional
  • 1 tsp jalapeno powder
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 1-2 stalk escallion finely chopped
  • 2 tsp thyme leaves 3 sprigs thyme finely chopped
  • 1 tbsp all-purpose seasoning
  • ½ cup all-purpose flour
  • 1 tbsp vegetable oil

Instructions

  • Heat oil in a frying pan and sauté onion and garlic for 1 minute. Then, set aside.
  • Add chickpeas, sauteed onion and garlic, cumin, salt, black pepper, turmeric powder, curry powder, escallion, thyme leaves, all-purpose seasoning, and jalapeño powder in a food processor or high-power blender and blend until it forms a dough-like consistency.
  • In a bowl, add chickpea mixture, then add small amounts of flour at a time. Form a thick dough using your hands or spatula to combine everything. Sprinkle flour onto a large baking tray and your hands.
  • Spoon small pieces of the dough sections using a spoon or ice cream scoop to form a ball and place them on a tray. If the batter is too sticky, add more flour to help with the binding process.
  • Using the bottom of a glass jar or rolling pin, flatten each ball and shape it into a patty —place it in the fridge for 30 minutes to be firmed.
  • Heat oil in a large frying pan, and fry each burger patties for 5-8 minutes or until golden. Flip the patties to repeat on the other side.
  • Serve on a burger bun and topped with your favorites: lettuce, tomato slices, and sauce of choice.

Notes

Notes for Making Chickpea Burgers:

  • If you prefer firmer patties, you can bake them in the oven after frying. Bake for 20-30 minutes at 200 degrees Celsius.
  • Breadcrumbs are a great substitute to help during the binding process.
  • Adding carrots, sweetcorn, and other ingredients can give your burgers more color and flavor to shake things up.
  • You can find steps to cooking dried chickpeas for this recipe here or use canned chickpeas.
