Heat oil in a frying pan and sauté onion and garlic for 1 minute. Then, set aside.
Add chickpeas, sauteed onion and garlic, cumin, salt, black pepper, turmeric powder, curry powder, escallion, thyme leaves, all-purpose seasoning, and jalapeño powder in a food processor or high-power blender and blend until it forms a dough-like consistency.
In a bowl, add chickpea mixture, then add small amounts of flour at a time. Form a thick dough using your hands or spatula to combine everything. Sprinkle flour onto a large baking tray and your hands.
Spoon small pieces of the dough sections using a spoon or ice cream scoop to form a ball and place them on a tray. If the batter is too sticky, add more flour to help with the binding process.
Using the bottom of a glass jar or rolling pin, flatten each ball and shape it into a patty —place it in the fridge for 30 minutes to be firmed.
Heat oil in a large frying pan, and fry each burger patties for 5-8 minutes or until golden. Flip the patties to repeat on the other side.
Serve on a burger bun and topped with your favorites: lettuce, tomato slices, and sauce of choice.
