Ingredients
  

  • 4 overripe bananas
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 ½ tsp cinnamon
  • 2 tsp vanilla extract
  • cup brown sugar
  • cup butter or vegetable oil
  • 1 egg room temperature
  • ¼ cup craisins optional
  • Optional: almonds for topping

Instructions
 

  • Mash bananas in a bowl then set aside.
  • Whisk together dry ingredients - flour, cinnamon, baking powder, salt, and baking soda. Set aside.

  • Add beaten egg, melted butter, sugar, and vanilla extract to mashed bananas and mix to incorporate ingredients.
  • Combine dry ingredients into the mashed bananas mixture. Fold together until well combined.
  • Add craisins, chocolate chips, or nuts to the batter.
  • Scoop batter into a greased 8-inch loaf pan. Top with sliced almonds and bake for 45-60 minutes or until toothpick comes out clean.
  • Remove from oven and allow to cool in pan.
  • Slice and serve.

Notes

Notes for Making Banana Bread

  • Instead of brown sugar, you can use any sweetener, such as maple syrup.
  • If your banana bread cracks at the top before completely baking this can mean the temperature is too high. 
  • Don’t overbake your banana bread. Remove from pan after cooling.
