- 4 overripe bananas
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 ½ tsp cinnamon
- 2 tsp vanilla extract
- ⅓ cup brown sugar
- ⅓ cup butter or vegetable oil
- 1 egg room temperature
- ¼ cup craisins optional
- Optional: almonds for topping
Mash bananas in a bowl then set aside.
Whisk together dry ingredients - flour, cinnamon, baking powder, salt, and baking soda. Set aside.

Add beaten egg, melted butter, sugar, and vanilla extract to mashed bananas and mix to incorporate ingredients.
Combine dry ingredients into the mashed bananas mixture. Fold together until well combined.
Add craisins, chocolate chips, or nuts to the batter.
Scoop batter into a greased 8-inch loaf pan. Top with sliced almonds and bake for 45-60 minutes or until toothpick comes out clean.
Remove from oven and allow to cool in pan.
Slice and serve.
Notes for Making Banana Bread
- Instead of brown sugar, you can use any sweetener, such as maple syrup.
- If your banana bread cracks at the top before completely baking this can mean the temperature is too high.
- Don’t overbake your banana bread. Remove from pan after cooling.
