Green Bean Casserole (Jamaican-Style)

- 3 ½ cups fresh green beans trimmed
- ½ cup onion finely chopped
- 1 cloves garlic minced
- 1 can cream of mushroom soup
- ½ tsp cumin
- 1 tbsp all-purpose seasoning
- 1 cup almond milk
- 1 ½ cup French's fried onions divided
- ⅓ cup red bell pepper chopped
- 1 scotch bonnet pepper garnish, optional
In a medium pot, blanch green beans in a pot of boiling water for 2-3 minutes. Remove from pot and add to an ice bath to stop the cooking process of the beans.
Preheat oven to 450 degrees Fahrenheit.
In a large bowl, stir together milk, all-purpose seasoning, cumin, and soup until there are no lumps. Then, stir in minced garlic, sweet peppers, and onion.
Add green beans and half of the fried onions, then mix until combined.
Scrape the mix into an 8” baking pan and cover with the foil. Bake for 25 minutes.
Remove the foil and top with the remaining fried onions, then bake for 5 minutes.
Notes for Making Green Bean Casserole
- Shake things up with your casserole by adding other ingredients, such as corn, sweet peppers, or diced carrots.
- You can add jalapeno powder and cumin to help bring out the flavor of your soup base for the casserole.
- For a thicker base, you can also add heavy cream.
