Curried Ackee and Chickpeas

Ingredients

cups
ackee
(parboiled or use canned ackee)
1½
cups
chickpeas
(canned or dried chickpeas, pressured)

tbsp.
curry powder
1
tbsp.
Morton Nature's Seasons
(all purpose seasoning)
1
small
onion
(finely chopped)
2
stalks
escallion
(finely chopped)
2-3
cloves
garlic
(finely chopped)
1
large
tomato
(diced or chopped)
1
tbsp.
vegetable oil
1
scotch bonnet pepper
(chopped)
salt and black pepper to taste
Instructions
Heat oil in a skillet over medium heat. Saute onions, escallion, and garlic for 1 minute.
Add curry powder to sauteed veggies and mix well.
Add the ackee, chopped tomatoes, and chickpeas. Stir gently to combine ingredients.
Season with all-purpose seasoning, salt, and black pepper.
Add water, and allow to simmer for 5-7 minutes.
Adjust taste if needed.
Serve.
